Spud's Chicken Wings



Preheat oven to 400 degrees.  Spray a baking pan with Pam, even if it is non-stick.  Line up your wing joints and drumettes in the pan and douse them with Crystal Hot Sauce.  (Not the wing sauce, just plain old Crystal.  If you can’t find that my next choice is Louisiana Hot Sauce.)  Bake for 30-40 minutes depending how big they are and how many pans you’re baking.  Take them out, dump the juice, (which you can save and add to a stock) turn them over, douse them again with Crystal and bake in the oven for another 30-40- minutes.  You’ll probably need a plastic spatula to get them off the pan.  They’re spicy but not too hot, keep well in the fridge and not greasy.  We serve them as an entrée sometimes with other finger foods like carrot sticks and tater tots.
